EASY CHEESY HASH BROWN CASSEROLE

Breakfast is serious business in the Yenges household - pancakes being a kiddo favorite, but this weekend is all about DAD, and because he deserves an extra day of celebrating, I wanted to whip up a quick and extra tasty breakfast each day this weekend for John, and today that breakfast was:
EASY CHEESY hash brown casserole
Emphasize on the easy, with a few other simple sides - maple sausage, my secret scrambled eggs, and extra buttery (slightly burnt) toast. YUM! Easy meals speak my love language, because let’s be honest cooking with one toddler sitting on your foot, and another one casually scaling the top of the couch, is like trying to nail jello to a tree. So needless to say, if I can throw a delicious recipe together in all of 15 minutes and pop it in the oven, then it’s my kind of recipe. This one gets brownie points because not only is it a simple list of ingredients and easy to throw together, but it’s also hands down the tastiest hash brown casserole I’ve ever had!
So if you’re looking for a go to hash brown recipe that the dad in your life is bound to love for his Sunday breakfast, this one’s ya girl ;)
2lbs (1 bag) oreida frozen hash browns - THAWED!
2 cups sour cream
2 cups grated cheddar cheese
1 can cream of chicken soup
1/2 cup melted butter
1/2 cup chopped onion
salt and pepper to taste
Preheat oven to 375 degrees
Lightly spray your large baking dish with non stick cooking spray
In a large bowl mix all of your ingredients together (yup, every single one)
Pour into your baking dish and sprinkle with cheese
Bake for 45 minutes or until yummy golden brown on top

That’s it. Told ya it was easy! TIP: I like to whip up my other sides while this one cooks to make good use of my time and so everything is nice and warm when it’s time to serve. Also, this is one of those special recipes, you know… the ones that impress for breakfast, lunch, or dinner. It’s a good one we like to pair up with sloppy joes in the summer!
